Hi,
Was in Tescos the other day and they were selling pigs intestine skins which my uncle always used to make sausages, did not believe in the artificial types. He believed they give you the big C, don't know if this is correct or not. The only problem with Tescos is that they have things in one week and then they disappear. Asked staff why and just got shrug off shoulders.
Also i love mango chutney, can you get it in your local stores, i have not seen it. While going to Lao the other week found the shop, Thai side of border, is now selling it. I know it is over 50K to the border but anyone on a "O" or "O-A" retirement visa will have to go there every 90 days.

Just make your own. I believe they have mangoes here.

Apple & fig sounds good and was tempted, but didn't have any idea on how to serve/use it. Recommendations ??

the problem with bottling stuff is the absence of suitable jars, some places sell the varieties with clamp lid and rubber seal, called Hermetic, but they aren't Hermetic at all.
They let air in. OK for refrigerator bottling but no good for proper long life preservation.

I imagine its available some where but I have not seen Pectin for sale either.

Just reuse old jam jars. The problem with the bigger hermetic jars is that you have to open them to use the stuff inside, which means you've got to get through a lot of the stuff in a short time before it spoils.

Well, was there a couple weeks ago and still haven't found corn meal anywhere yet. Anyone have ideas for that or pinto beans? Used to get this at the Udon supermarket, but that was a long time ago.

In yester year Udon was not served well for Western provisions and to some extent that is still true, but it is better than it use'd to be although you will have to go to several supermarkets to fill your Western basket.

Seen pinto beans (canned section) and corn flour (opposite the meat freezer section under cake mixes) in Makro. But they of course may have well moved things around again.

Pinto beans, I stock up when in Bangkok, hunted high & low, never seen them here, canned or raw, and same for corn meal (not corn flour which is easy) but not seen corn meal here, its manufactured in Thailand as well.
I had a couple of packets well past use by date, opened them and full of weevils. :(

Like Lock Man, I've not been able to find corn meal in Udon. Plenty of corn flour, but no corn meal. I usually stock up on corn meal when I go to Bangkok (Villa Market carries it) and I was able to buy some at the small shop near the Nong Khai bridge that sells western food.

Being from the midwestern/southern part of the US, corn meal is a common ingredient in many of our recipes. I typically get several bags while in Bangkok and put it in the freezer for long term storage.
