I did not say i could not buy them in Thailand, i get mine in the shop just before the Friendship bridge, very good, Haywood pickled onions and Midas mango chutney which you can get in sweet or sour.
As for making pick. on., red shallots these i personally would not use, taught this way in the fifties. White onions or white shallots, i prefer the white onion myself the size being limited by the size of the jar you use. Tesco sell the jars with a seal in the lid, this seal you can use only once, try getting new seals :( To make the onions crispy i soak them in a concentrated solution of salt and water. I'm in my seventieth year now and come out here to relax. Do not want to cook all the time. Brought a couple of packets of pickling spices from home, very good but you can not buy some of the spices i use over here. Made ten jars of pickled onions but to many people wanted to try them and they did not last long, pickled onions with cheese and french bread, great.
These items have a long shelf life so if they only move slowly no problem and if you get a customer into the store the odds are he or she will buy more. You can find plenty of pickled garlic, limes, etc, etc. so why not onions.

Cheese and pickled onions! What a combination.trouble is, cheese so expensive here.The Vintage cheese on sale here is great.But I do that in two days!
Last month, I bought some real mature Australian cheddar cheese from Macro.(Chefs choice) Real good taste.2 Kilo for 1,090 baht.
But never see again on sale.

I saw both Mango Chutney and Pickled Onions plus other pickled veggies at Carrefour today.
