I had a card,now lost,mentioning a Swissman in Nong Khai near the Mekong who makes his own sausages,sells meats,cheeses and wondered if anyone can confirm still open for business,map reference etc.

There are a couple of guys in town doing something similar to what you mention, they are both located very close to the Tha Sadet market on Rim Kong Road.

I'm pretty sure the names of the places are Apples and Thasadej.

You can also get some superb pies from Beer Belly Billys at the other end of town.
